I know millions of other parents also face this, so I’m going to attempt to dedicate one post a week to recent menus and recipes that I’ve tried out – and that have been quick, easy and delicious!
Here’s to cereal-free dinners!
My first recipe is one that we had last week – and loved. Enjoy, and let me know of any tweaks that you’d make.
Soy Curry Chicken & Rice – Serves 6
Total prep & cook TIME: 45 minutes
(Place 2 chicken breasts in the fridge before leaving for work in the morning.)
Preheat oven to 350 degrees.
¼ C. honey
2 t. mustard
¼ C. soy sauce
½ t. curry powder
Dip and coat chicken breasts in mixture. Place chicken breasts in greased baking dish for 30 – 40 minutes or until cooked.
15 minutes before chicken is cooked, make rice as a side dish.
Bonus – throw some cut-up red and green peppers into the baking dish 5 minutes before removing the chicken.
