Thank you, Rachael Ray for a great, easy meal. We tried Rachael’s “Taco Pockets” recipe this week, made some slight adjustments (adding refried beans) and really enjoyed them. Even had leftovers! We substituted ground turkey meat and thought they were great – so consider that option.
- 1 pound ground beef (or ground turkey)
- ¼ medium onion, chopped
- 2 t. water
- 2 T ground cumin
- 2 T. chili powder
- Shake or two of cayenne pepper
- 1 clove of garlic, pressed
- ½ t. salt
- 15 oz. can of refried beans
- 4 flour tortillas
- 1 ½ C. grated cheese
- Shredded or torn lettuce pieces
- Tomato slices
Mix meat with onion, water and seasonings in bowl (best if mixed together with hands!). Form into 4 patties.
Heat nonstick skillet over medium heat (or heat BBQ!). Cook patties 4 to 5 minutes on each side.
Warm refried beans in a dish and warm the tortillas. Place a couple spoonfuls of refried beans in the middle of each tortilla and smooth out a little. Place each burger in the middle of the beans on the tortillas. Top with the cheese, lettuce and tomato. Wrap the tortilla up and over the burger on all four sides.
Flip the now square-shaped tortilla pockets over and cut diagonally across! Voila – taco pockets.
