Some friends and I were recently talking about a coconut-flavored syrup one of them bought. She and her boyfriend were so excited to try it, but quickly realized that it was nothing like what they expected and they tossed it. I mentioned that we make our syrup at home – and love it. The consistency is just right, you can whip up a batch while the waffles are cooking – if it’s totally last minute – and it’s really easy.
Here’s my mom’s recipe. Keep in mind that you can also “flavor” it yourself. I haven’t tried a coconut flavor, but blueberry juices work really well. (Since we buy the big bag of blueberries at Costco to put in our cereal and make smoothies out of, I just save the remaining juices and freeze them until needed!)
Melissa’s Maple Syrup
- 2 C. sugar
- 1 C. water
- ¼ t. cream of tartar
- ½ t. maple flavoring
- Cook sugar, water and cream of tartar together in a saucepan over medium heat, stirring until simmering.
- Stop stirring and let it simmer for 3 minutes.
- Remove from heat and cool a bit, then add the maple flavoring and stir in.
